It's Not a New Year Without Jellied Fish

As you sit around your holiday table, passing the turkey, ham or family favorite, know that if you were in Russia, you'd be passing the jellied fish. According to Lena, IA's Moscow General Manager, the Russian dish is on every holiday table. Here is her mother's recipe:

Fish in Aspic - Jellied Fish

1 kg fish, sturgeon is best but perch or halibut will do
1 liter court bouillon (fish broth)
40 g gelatin
two egg whites
a carrot
a root of parsley
an onion
1/2 a lemon
dill and parsley to taste

Wash and cut pieces of fish and cook til it's ready and chill. Try to take the bones out without destroying the fish. Sift the broth. Dissolve the gelatin in cold water and then dissolve in the hot broth. When the broth with the dissolved gelatin gets chilled a little, add egg whites, carrot, root of parsley and an onion and boil the broth until it gets clear then strain the broth through gauze and let it get chilled. On the bottom of a dish, pour some jelly, add the fish, top fish with slices of lemon and a nicely cut carrot, dill and parsley. Sometimes Lena's mother adds slices of hard-boiled eggs. The dish is served with horseradish mixed with vinegar or mayonnaise.

(We suspect something may have been lost in the translation...but everything, including cooking, should be an adventure.)

The Reason We're So Jolly

This year was definitely not easy. We can honestly say we had to work harder than we've ever worked before. Constantly changing gas prices and rising and falling currency rates at times made our lives "heck". The good news is that hard work really does pay off. We are proud to report that we are about to wrap up our best year ever. As a company, we've never been doing better and you can be confident we're going to be around, making dreams come true, for at least another 15 years. We'll Be Home
for the Holidays

We'll actually be lots of other places too, but in our Sarasota office isn't one of them. We're going out for our traditional holiday lunch on Tuesday, December 23 and not coming back to work until Monday, January 5th.

Don't let our holiday "vacation" stop you from planning your next incredible adventure. We won't be in our office, but we'll still be checking our emails and listening to our telephone messages. (You don't set sales records year after year by being slackers. We work even when we're not at work.) We'll respond to your messages just as soon as we get home from the beach...or back from fishing, playing tennis, kayaking or swimming with the manatees.

Snowy Russian Night Christmas in Russia comes January 7th so our staff in Moscow and partners in Nizhny Novgorod will be taking their annual holiday break from January 1st until January 10th. Usually, Lena, our Moscow general manager, goes skiing in Europe over the New Year, but this year, she's going to stay at home with her husband and child. We're kinda happy about that. People break ankles skiing and we need Lena healthy when she meets you at the airport to start your MiGs Over Russia Adventure.
